Grown-Up Goat Cheese Mac

Servings: about 4 (depending on serving portions)
Ingredients:
- 1 package of noodles (whatever you have on hand I used penne this time but you could use macaroni, fusilli, or anything else you have on hand)
- 300g Soft goat cheese
- 2 garlic cloves, minced
- 2 cups mozzarella cheese, shredded
- Parmesan Cheese, shredded
- 1/4 cup butter
- 2 tbsp. flour
- 1 1/2 cup heavy cream
- Italian seasoning
- Salt & Pepper
- optional - leftover protein - I had leftover rotissere chicken from the night before so I shredded it and added it into the pot after I added the sauce
Instructions:
- Preheat oven to 350 degrees
- Season a large pot of water with salt and cook noodles until al dente, then drain and add back to the pot (reserving 1 cup of pasta water)
- Melt half of the butter in a saucepan and add garlic
- Gradually add the flour and whisk until it forms a roux
- Slowly pour in the milk and whisk until well combined and no lumps remain
- Add the goat cheese, mozzarella, and Italian seasoning and whisk until cheese has melted
- Taste the sauce and decide if you need to add more Italian seasoning and then season with salt and pepper
- If your sauce is too thick, you can add some of the reserved pasta water, if it is too thin, you can always add more cheese ;)
- Pour the sauce on top of the cooked pasta noodles and coat well
- Pour the sauced pasta into a baking dish and coat with shredded parmesan cheese
- Bake at 350 for a few minutes until the cheese melts
- optional broil for 1-2 minutes to brown the cheese
