With Yam Fries and Chive Dip

Steak is normally a “special-night” meat… but throw it on a sandwich and serve with fries and its casual enough to eat in your lulus!

Sirloin Steak Sandwiches, Yam Fries with Chive Dip and pickled onions.

  • Prep time: 15 minutes
  • Cook time: 8-15 minutes
  • Total time: ~30 minutes

Servings: Dinner for 2

Ingredients:

  • 2 Free Range Top Sirloin Steaks
  • 1 Cup White Vinegar
  • 1 cup water
  • 1 Tbsp. Sugar
  • 1 tsp. Salt
  • Dijon Mustard
  • Mayonaise
  • Arugula
  • 1/2 Red Onion, thinly sliced
  • 1 Yam
  • Olive Oil
  • 1 cup Greek Yogurt, plain
  • 1 lemon, juiced
  • Chive, sliced thin
  • Meridian House Seasoning
  • Thick Sliced Bread
  • Crumbled Blue Cheese
  • Salt & Pepper

Instructions:

  1. Cut yam into fries and place in a mixing bowl
  2. Coat with olive oil, salt, and pepper
  3. Place fries on a parchment-lined baking sheet and bake for 20-25 minutes at 425 degrees C (flip halfway)
  4. In a small bowl make the yam fry dip by mixing yogurt, lemon juice, chives, salt, and pepper. Set aside until ready to serve.
  5. In a saucepan over medium-high heat bring vinegar, water, salt, and sugar to a boil stirring until sugar dissolves
  6. Place onion slices in a heatproof bowl and pour the vinegar mixture on top.
  7. Coat a wire baking rack with olive oil and then place on an aluminum foil-lined baking sheet
  8. Season steak with Meridian House Seasoning and place on the wire rack
  9. Place baking sheet approximately 4 inches from the broil and broil on high for 4 minutes. Flip steak and continue broiling until well browned (around 4-10 minutes) until the desired doneness is achieved
  10. Allow steak to rest for 10 minutes before slicing
  11. Spread dijon and mayo on bread and top with arugula then sliced steak. Top with pickled onions and crumbled blue cheese.
  12. Serve with yam fries and yogurt chive dip
